Fry - Thai Food

Pork mince omelette (ไข่เจียวหมูสับ)

(Serve 3)

(Cal. 355 per serve, with rice = Cal.470)

This's the Thai meal that I've never seen anyone make it better than my mom..! Her recipe is just perfect. So I talked to her on the phone and got her to reveal the secret. She said "make it as thick as you can" it's the only secret she's got! The healthy part of this dish are it contains very high protein from egg and lean minced pork which makes this dish perfected for people recovering from sickness or the one who wants to build some muscles.. Here we go :-P

Ingredients:
1. 3 eggs
2. 100 g of pork mince (chopped pork)
3. 5 tablespoon of extra light olive oil
4. 2 spoons each of the following : soy sauce, fish sauce & oyster sauce

Put all (sauce, mince, eggs) in one bowl..!

Beaten them all up with fork.. until you see some bubble floting on the surface.

Put oil in the medium set wok that quite curvy at the edge (dont use shallow pan, it'll make your omelette flat & look less yummy!) Remember, put quite a bit of oil otherwise your omelette will turn out flat as well (See the pic.)

Another secret is to wait until the oil is very hot until you pour the mixture in to the wok. There should be sizzling sound at the time the mixture's touching the oil!

Flip the egg over without breaking it in half when you think the bottom is cooked (that's the tricky part!) Trying to use a large flat spatula if you have one.

Here you go, It's done nicely. Thick enough for me to not to get a complaint by my mom.. hee hee Dont forget some chilli sauce or tomato sauce to eat with. They both are just the best with pork mince omelette.
