Fry - Thai Food

Pork mince omelette (ไข่เจียวหมูสับ)

(Serve 3)

(Cal. 355 per serve, with rice = Cal.470)

This's the Thai meal that I've never seen anyone make it better than my mom..! Her recipe is just perfect. So I talked to her on the phone and got her to reveal the secret. She said "make it as thick as you can" it's the only secret she's got! The healthy part of this dish are it contains very high protein from egg and lean minced pork which makes this dish perfected for people recovering from sickness or the one who wants to build some muscles.. Here we go :-P

Ingredients:
1. 3 eggs
2. 100 g of pork mince (chopped pork)
3. 5 tablespoon of extra light olive oil
4. 2 spoons each of the following : soy sauce, fish sauce & oyster sauce

Put all (sauce, mince, eggs) in one bowl..!

Beaten them all up with fork.. until you see some bubble floting on the surface.

Put oil in the medium set wok that quite curvy at the edge (dont use shallow pan, it'll make your omelette flat & look less yummy!) Remember, put quite a bit of oil otherwise your omelette will turn out flat as well (See the pic.)

Another secret is to wait until the oil is very hot until you pour the mixture in to the wok. There should be sizzling sound at the time the mixture's touching the oil!

Flip the egg over without breaking it in half when you think the bottom is cooked (that's the tricky part!) Trying to use a large flat spatula if you have one.

Here you go, It's done nicely. Thick enough for me to not to get a complaint by my mom.. hee hee Dont forget some chilli sauce or tomato sauce to eat with. They both are just the best with pork mince omelette.

Fry - Thai Food

Royal Fried Egg (ไข่ดาวทรงเครื่อง)

(Serve 2)

(Cal. 351 per serve without rice, Cal.466 with 100g of steam rice.)

Here come another healthy food. It's very easy to make. It's so full with protien and variety vegies. You can replace some potion of mince pork by more vegies if you'd like this dish to be more diet Thai food. Ooh yes and also eating this with steam jasmine or brown rice would make it even more perfect.! Alright.. it's time to cook!

Ingredients:

1. Pork mince 100 g. or less than than if you put more vegies. Taste will be the same trust me.
2. Frozen mixed vegies from your local supermarket.
(We use just a handful so you can keep the rest in freezer - Pick the one with a lot of corn kernels & peas, there're plenty of choices out there!)
3. Oyster sauce: 2 tbspoon
4. fish suace: 1 tbspoon
5. egg: 2
6. corn flour 1 tbspoon (mixed in 4 tbspoon of room temp. water)
7. water about half cup
8. Extra light olive oil :2 tbspoon
9. just about 1 teaspoon of suger and a pince of white pepper

1. All the sauces and the ingredients we'll use..




2.This's the delicious part. Put mince, oyster sauce and a bit of white pepper in a bowl then mix well.







3. Oki doki, here come the healthy part. Frying egg. Just fry like it what you see in the pic. until the york is half cooked. Take out from the wok & set aside on your fav. lovely plate.




4.Put some water (about half cup) in the wok (you can use the same wok that you just fried the egg)

As the wok's still hot, you can start putting mince, all the sauces (fish sauce, Soy sauce & sugar) in and wait till the mince's cooked first then here's come the dietary vitamins and fiber parts-the mixed vegies. Put a very big handful of frozen mixed vegies in the wok, stir well until the vegies are softened.







5.Then ..Here's a tips of the grevy like sauce - corn flour. Mixed corn flour with water(quantity as listed at the ingredients) until the flour's melted with water then pouring into the center of the wok, keep stirling otherwise the flour will form lumps. After 2 mins, the sauce will get thicker and looks yummier! yey..!!






6. Yummy.y.y. Once is sauce is done. Just pop it on top of the egg straight away. I'll show you 2 pics. of how you can eat it. The first one is when you eat the royal fried egg alone (this'll make a lovely lunch or dinner when eating with salad) and the 2nd one is when you eat it with rice (pls check the calories counted up there)
